Our Approach
Tallgrass was built to celebrate the beer, wine, spirits, and producers that call the Midwest home. Whenever we can, we choose local, not because it’s trendy, but because we believe good hospitality starts with supporting our neighbors.
We don’t try to stock everything or make every cocktail. Our selection is intentionally curated around what we believe in, what we like to drink, and the makers we’re proud to support. If we don’t have your usual, we hope you’ll let us pour you something new.
That philosophy shapes what we put behind the bar. Our featured cocktails start with familiar favorites like the Manhattan, Espresso Martini, and Negroni, with a focus on the regional distilleries behind them. Our beer and wine selections come from local breweries and wineries whenever possible.

Citrus is a good example: we use dried citrus for the eye, fresh juice for flavor, and aroma for the nose. Small choices, but they add up.

Our cocktails are built to be balanced from the start, with specific ingredients, proportions, and preparation in mind. We serve them as designed because we think they taste best that way.
